                               Potato Pancakes

5 large potatoes

1 large onion

4 eggs

1/3 cup dry bread crumbs

1 tsp. salt

1/4 tsp. pepper

dash of parsley or chives

1/3 oil for frying

Grate potatoes and onion on the fine side of your grater. You can also use your food processor, add a bit of water. Stir in the eggs, onion, spices, and combine, be sure to mix well. Put the oil in your frying pan. Medium High heat, but don't scorch your pancakes. Form into patties and place in pan. Turn over and try to get both sides evenly brown.

Serve with a full meal or a stand alone snack with sour cream or apple sauce.
